The analysis new product development process of kale commodities in Gumuk Bago Nogosari Village Rambipuji
Abstrak
Proses New Product Development (NPD) merupakan langkah-langkah terstruktur untuk mengubah konsep menjadi produk siap pasaran. Salah satu produk yang memiliki potensi besar adalah kangkung, yang banyak ditemukan di Dusun Gumuk Bago, Desa Nogosari, Rambipuji, Kabupaten Jember. Penelitian ini bertujuan untuk mengembangkan mie kangkung guna meningkatkan kualitas komoditas kangkung dan memberikan nilai tambah bagi petani lokal. Pendekatan yang digunakan adalah kualitatif deskriptif dengan pengumpulan data melalui wawancara, observasi, dan studi literatur yang melibatkan 20 petani setempat. Proses NPD mie kangkung melibatkan pembuatan tepung kangkung melalui pengeringan pada suhu 50° C untuk menjaga kandungan nutrisi, kemudian diformulasikan dengan tepung terigu pada rasio 20%. Hasil penelitian menunjukkan bahwa mie kangkung memiliki kandungan serat dan zat besi lebih tinggi dibandingkan mie konvensional, sehingga memiliki manfaat untuk kesehatan, seperti pencegahan anemia dan peningkatan pencernaan. Uji organoleptik menunjukkan mie kangkung disukai konsumen karena rasa yang seimbang, tekstur kenyal, dan penampilan menarik. Pengolahan kangkung menjadi tepung juga membantu mengurangi kerugian petani akibat hasil panen yang terbuang dan meningkatkan pendapatan mereka. Proyeksi pasar di Kabupaten Jember diperkirakan mencapai Rp 2,5 miliar per tahun. Meskipun demikian, terdapat beberapa kelemahan, seperti keterbatasan teknologi pengolahan, infrastruktur distribusi yang kurang memadai, pemasaran terbatas, ketergantungan musiman bahan baku, dan rendahnya kesadaran merek yang dapat menghambat penetrasi pasar. Dengan penanganan yang tepat terhadap kelemahan-kelemahan tersebut, pengembangan mie kangkung berpotensi memperkuat ekonomi lokal dan meningkatkan kesejahteraan petani.
